i use a rotary knob switch rated at 900 amps this way it can be switched off for in the city and shit as well as preventing accidental drainage ....

A breaker can be a problem. Sometimes they tend to stick and will not break the circuit. A manual breaker like a gillutine switch would be better over the electric style.
What about the master power switch you see on race cars? All my power goes through this switch for my street stock, but not sure if it can handle the amperage drawn by a winch. It can handle a starter draw no problem.
There are also those quick disconnect battery switches.
Look into a set of plugs that mount to your grill. Something like the accesorie power on the battery box of a Peterbilt or Kenworth. Then plug your winch into that when you need it.
Just a couple ideas.

If you go to a marine store you can get a wafer fuse rated for 200 and up plenty for a winch but if ya short the wire it'll pop
